Biscuit Forming Equipment
Soft Biscuits – For high-definition 3-D shapes, the Thomas L. Green Rotary Moulder presses dough into interchangeable die rolls and is available with segmented rings for simultaneous, multi-shape production. The machine is built on lockable casters which provides portability and interchangeability with existing production line components.
Hard Biscuits – The Thomas L. Green 3-Roll Sheeter generates a consistent dough sheet ready for further thickness reduction. The Gauging Stations then ensure a gentle reduction in sheet thickness prior to shape forming. Dough flow is accurately controlled to maintain dough density, laminations and finished product weights.
Geometic & Distinct Shapes –The Thomas L. Green Rotary Cutting Station accurately and continuously cuts product shapes out of a single dough sheet and reroutes scrap dough to the dough handling system for reuse. This system can be designed with two die rolls to accommodate complex shape adjustment and can be quickly changed to increase product flexibility.

The Thomas L. Green PRISM OVEN is ideally suited for biscuit, cookie and cracker production with a single-pass baking platform designed to improve consistency and deliver uniform quality, color, taste and texture.
The oven offers direct gas fired (DGF), convection, and emithermic (radiant / convection) baking zones, and each zone is available with a variety of options that will create a cost-effective system with a combination of radiation, convection heating and conduction.
Customers may choose traditional brick or the Thermatec High Radiant Ceiling, a new technology with comparable performance to traditional fire brick oven ceilings. This new technology radiates heat as effectively as fire bricks, is less expensive, and requires less maintenance than fire bricks.
