Mixing Biscuit Dough
Producing uniform and consistent dough in large quantities can be a challenge, and batch mixing often adds unwelcome dough variations that negatively affect product consistency.
The Exact Mixing MX Continuous Mixer is exceptionally versatile. It offers dough production rates from 50 to 2,000 kg/hour and is designed to accommodate a wide range of products, from biscuits, cookies, and snacks, to batters, icings, and pastes.
The Thomas L. Green Vertical Spindle Mixer is another efficient solution for mixing fermented, unfermented, and rotary moulded doughs. It is the perfect choice for two-stage batch mixing, where consistency and repeatability are necessary to control the quality of your products.
Forming Biscuit Dough

Hard Biscuits: Our 3-Roll Sheeter generates a consistent dough sheet that is ready for lamination or further thickness reduction. Gauging Stations ensure a gentle reduction in sheet thickness before shape forming while accurately controlling dough flow to maintain dough density, laminations, and finished product weights.
Soft Biscuits: If you manufacture high definition, three-dimensional soft biscuits, our Rotary Moulder offers an interchangeable die roll made of engraved brass that can be supplied with segmented rings for multiple shapes.
Biscuits with Distinct Shapes: The Rotary Cutting Station accurately and continuously cuts distinct shapes from a single dough sheet and can accommodate sheets thicker than 1.65mm (.065") before cutting. All die rolls are easily and quickly changed for more product flexibility and less production downtime.
