Hard & Soft Biscuit Systems

Our Thomas L. Green Hard & Soft Biscuit Systems create sheeted and rotary moulded biscuits. Soft biscuits are made with a Rotary Moulder that is designed to efficiently produce high definition, three dimensional biscuits, cookies, and pet treats. The system features a 3-Roll Sheeter, Gauging Rolls, and a flexible Rotary Cutting Station for hard biscuits.

Continuous mixing systems from Exact Mixing are fully automated; they reduce labor, cut costs, improve consistency, and simplify your mixing process. Biscuits and cookies are produced on our EX Continuous Mixer, explicitly designed for mixing low- to mid-absorption, fully developed doughs. With this recipe-driven system, final product quality is assured and is fully repeatable.

The Thomas L. Green PRISM oven is used on this line for balanced and consistent baking.  Depending on your baking needs, the Prism Oven is available in Direct Gas Fired (DGF), Convection, and Emithermic (radiant/ convection) zones.

Rotary Moulded Biscuit Systems

Our Thomas L. Green Rotary Moulded Biscuit Systems efficiently produce high definition, three-dimensional biscuits, cookies, and pet treats. They can be fed with a batch mixer or a Continuous Mixer depending on your level of automation.  

For biscuits, cookies, and other products that require ingredients to be blended before adding most of the flour, consider the LDX Continuous Mixer. The first stage combines all minor ingredients with some of the flour and cuts in the fat. The remaining flour is added in the last stage to create the final dough.  

This system also incorporates the Thomas L. Green PRISM convection oven.  The Convection Zone serves as a setting, coloring, or drying zone. Combustion and air are heated in the penthouse and circulated into the baking chamber. The air is distributed to the product above and below the conveyor.

WCS Wirecut Machine

Another superb option is the revolutionary new Thomas L. Green GenesisPro WCS Servo Wirecut Machine for creating biscuits, cookies, and bars at high yields of up to 300 cuts per minute while maintaining consistent piece weights and a high degree of accuracy.

Custom-designed die and wirecut assemblies are created for specific product characteristics and can include capabilities for two-dough products, co-extruded cookies, and encapsulated products. Topping dispensers can be integrated into the design for further flexibility.

The WCS Wirecut Machine uniformly cuts individual shapes by an adjustable wireframe assembly. The recipe-driven linear servo motors provide an infinite number of cam profiles to control wire positioning, stroke length, drop- and up-shoot.
