Forming Solutions
For hard biscuits, the Thomas L. Green 3-Roll Sheeter generates a consistent dough sheet ready for further thickness reduction or lamination. Gauging Stations then ensure a gentle reduction in sheet thickness by a 2:1 ratio prior to shape forming. Dough flow is accurately controlled to maintain dough density, laminations and finished product weights.
If your production involves high definition, three dimensional soft biscuits, the Thomas L. Green Rotary Moulder features an interchangeable die roll made of engraved brass that can be supplied with segmented rings for multiple shapes. Operator controls are intuitive and allow for complete automation of the moulding process.
Form distinct shapes with the Thomas L. Green Rotary Cutting Station which accurately and continuously cuts product shapes out of a single dough sheet. An integrated conveyor system moves product through, and is pressured against, a rotating die assembly. Operators can adjust the pressure on the dough sheet during operation to ensure a thorough cut and consistent piece production.
Baking Solutions
The Thomas L. Green PRISM OVEN has been trusted in the biscuit, cookie and cracker industry for over 120 years. It is a flexible single-pass baking platform designed to enhance product consistency. Features include:
