Mixing Biscuit Dough
Continuous Mixing equipment from Exact Mixing, a Reading Bakery Systems brand, accurately delivers ingredients to the mixer at rates high enough to produce a consistent better-quality finished product.
The Exact MX Continuous Mixer is our most versatile mixer. It offers dough production rates from 50 to 2,000 kg/hour and is designed to accommodate a wide range of products, such as biscuits, cookies, snacks, muffins, batters, icings, and pastes.
Forming Hard or Soft Biscuits
For hard biscuits, the Thomas L. Green 3-Roll Sheeter generates a consistent dough sheet ready for further thickness reduction or lamination. Gauging Stations then ensure a gentle reduction in sheet thickness by a 2:1 ratio prior to shape forming. Dough flow is accurately controlled to maintain dough density, laminations and finished product weights.
Distinct shapes can be formed by the Thomas L. Green Rotary Cutting Station which accurately and continuously cuts distinct product shapes out of a single dough sheet. Dough sheet thickness is typically between .89mm (.035") and 1.65mm (.065") prior to cutting, but thicker sheets may be accommodated. All die rolls are easily and quickly changed for increased product flexibility and decreased production down time.
If your production involves high definition, three dimensional soft biscuits, the Thomas L. Green Rotary Moulder features an interchangeable die roll made of engraved brass that can be supplied with segmented rings for multiple shapes.
Baking Biscuits
