Biscuit Forming Solutions

The Thomas L. Green 3-Roll Sheeter generates a consistent dough sheet ready for further thickness reduction or lamination. A conveyor is installed beneath the sheeter and transports the newly formed dough sheet from the bottom of the sheeter into the Gauging Stations. The Gauging Stations then ensure a gentle reduction in sheet thickness prior to shape forming.

Scrapless geometric shapes and distinct cracker shapes can be formed by the Rotary Cutting Station. The Cutting Station accurately cuts product shapes out of a single dough sheet. Dough sheet thickness is typically between .89mm (.035?) and 1.65mm (.065?) prior to cutting, but thicker sheets may be accommodated via factory customization. All die rolls are easily and quickly changed for increased product flexibility and decreased production down time.

If your production involves high definition, three dimensional biscuits, cookies, or sandwich cookies, the Rotary Molder features an interchangeable die roll made of engraved brass that can be supplied with segmented rings for multiple shapes.

Biscuit Baking Solutions

The Thomas L. Green PRISM OVEN is ideal for biscuit, cracker and cookie production with a single-pass baking platform that’s designed to enhance consistency and deliver uniform quality, color, taste and texture.

It offers both recirculation and convection baking zones. The combination oven utilizes the best of both zones with the recirculation zone providing product development and “cooking” functions, allowing the convection zones to provide efficiently controlled moisture removal and balanced coloring.

The Prism Oven offers repeatable control of time, temperature, humidity and type of heat transfer. Modules are available in full stainless steel to address salt, corrosion and high humidity levels, and can be factory pre-built for fast installation or assembled on-site.
