Dough Mixing

The Thomas L. Green Vertical Spindle Mixer is suitable for cookies, crackers, biscuits, and doughs that require a two-stage mixing process with a fermentation period in between. The mixer allows the same dough to be mixed twice and stay in the same trough throughout the process.

To simplify your mixing process and produce large quantities of consistent, uniform dough, we recommend Continuous Mixing, which accurately delivers ingredients to the mixer at rates high enough to help you make a better-quality finished product.

The Exact MX Continuous Mixer is our most versatile mixer. It is specifically designed for products with dough moisture levels ranging from very low to high and those with inclusions that need to be protected from damage. It’s an excellent solution for products that require high-energy mixing and features particular mixing actions to ensure inclusion integrity. Use it for cookies, pizza, snacks, batters, icings, and pastes. It is also an ideal first-stage mixer for processes that require creme-up and pre-blend stages. This mixer offers dough production rates from 500-6,000 kg/hour.

The Exact EX Continuous Mixer is designed for mixing low- to mid-absorption, fully developed cookie doughs, including wirecut cookies, rotary moulded cookies, and deposited cookies, without generating too much heat. The mixing action is thorough and quickly forms a mass, evenly blending the leavening agents into the dough for a uniform piece size after the oven. The EX Continuous Mixer offers dough production rates from 100 to 10,000 kg/hour.

Cookie Systems

Depositor and Wirecut Cookie Systems –This system is designed for the flexible and efficient production of filled and decorated cookies and biscuits. Our depositor is capable of depositing, extruding, and wire-cutting to create all types of biscuit and cookie products. It processes batters, soft and stiff doughs, and fillings for co-extruded applications. The Prism Oven is used on this line for balanced and consistent baking.

Rotary Moulded Biscuit System - This Thomas L. Green system efficiently produces high-definition, three-dimensional biscuits, cookies, and pet treats. The Prism Oven is available in direct gas-fired, convection, and Emithermic (radiant/ convection) zones for balanced and consistent baking, depending on your product type.

Wirecut Cookie Systems - Our production lines create various wirecut cookie products and can integrate batch or continuous mixing. The Thomas L. Green Wirecut Machine makes a variety of cookies, biscuits, and bar products. It provides piece-weight accuracy and reliability and is best for nondescript shapes. It uniformly cuts individual shapes at up to 300 cuts per minute, depending on product type.
