About RBS Ovens

The PRISM OVEN offers direct gas-fired, convection, and Emithermic (radiant/convection) baking zones. Customers enjoy balanced and consistent product quality, color, taste, and texture. Hybrid ovens utilize DGF zones for product development and cooking functions and convection zones for efficient moisture removal and balanced coloring.

A convection oven saves energy compared to other types of ovens. It works by circulating hot air throughout the cooking cavity more evenly, resulting in consistent results, faster baking times, and more efficient energy use.

Emithermic ovens utilize a combination of radiant heat and convection currents to achieve consistent and efficient results. With precise temperature control, emithermic ovens are ideal for baking and other cooking techniques that require consistent heat distribution.

The highly flexible SPECTRUM OVEN® offers radiation, convection, and conduction heat transfer options in a single modular design. It is an easy-to-use system and gives the operator complete control of oven temperature, humidity, and product bake time. Operators can monitor and modify how heat is distributed to the product during production.

PRISM and SPECTRUM OVEN® are both available with a full range of control options for optimum performance. "Recipe" settings within the control processor allow for fast and repeatable startups, and controls are provided as easy-to-use touchscreen interfaces.

Electric Ovens

If you are interested in full electric baking, RBS offers an electric version penthouse for our convection style and emithermic ovens.  The gas penthouse can be exchanged with an electric penthouse on our existing ovens. This would only involve a new penthouse and the electrical control panel. 

We have also developed an electric cracker oven to replace DGF ovens by modifying our Emithermic Oven Zone, enabling it to impart the higher heat required by crackers without a lot of air currents which would dry the product before allowing flavor and texture development.
