Continuous Mixing Solutions for Cookies
Continuous Mixing eliminates undesirable dough variations that result from batch-to-batch mixing and gives you consistent and repeatable dough, all day, every day.
The Exact EX Continuous Mixer is designed specifically for mixing low- to mid-absorption, fully developed cookie doughs, including wirecut cookies, rotary moulded cookies, and deposited cookies, without generating too much heat. The EX Continuous Mixer offers dough production rates up to 7,500 kg/hour.
The Exact LDX Continuous Mixer is designed for cookies (and other applications) where ingredients need to be blended before adding flour. All ingredients (except flour) are combined in the crème-up stage, and special mixing elements cut the fat into the other ingredients. The flour is added before the development stage where the final dough is created. The LDX Continuous Mixer offers dough production rates up to 9,000 kg/hour.

Rotary Moulders: If you manufacture high definition, three dimensional biscuits, cookies, sandwich cookies, or bars, the Rotary Molder features an interchangeable die roll that can be supplied with segmented rings for multiple shapes.
Wirecutting: The Thomas L. Green Wirecut Machine helps you create a variety of cookies and biscuits. It provides piece-weight accuracy and reliability, and is best for nondescript shapes, with or without inclusions. It uniformly cuts individual shapes at up to 300 cuts per minute, depending on product type. Both digital and manual controls are included for optimal process control, and the cutting wire can be interchanged for products with different densities and inclusions.
