Mixing

Producing large quantities of consistent, uniform dough can be a challenge. Reading Bakery Systems’ continuous mixing systems can accurately deliver ingredients to the mixer at rates high enough for you to produce a better quality finished product.

The Exact FX Continuous Mixer is ideal for hydroscopic powders such as the potato flakes used to make fabricated potato chips and other low moisture mixtures. It offers many advantages over batch mixing, particularly its ability to produce more consistent dough with less labor and energy.

The FX Continuous Mixer can be used for baked potato chips, stackable potato chips, corn chips, veggie chips, potato snacks, rice crisps, and other low moisture mixtures.

Forming/Cutting

The single-reduction Thomas L. Green 2-Roll Sheeter produces a continuous dough sheet ready for dough forming or further reduction that is discharged directly onto the Rotary Cutter infeed conveyor.

The Thomas L. Green Rotary Cutting Station accurately and continuously cuts product shapes out of a single dough sheet. Scrap dough is removed and discharged from the machine and can be re-routed to the dough handling system for reuse. This system can be designed with two die rolls to accommodate complex shape adjustment and can be quickly changed to increase product flexibility.

Baking

The extremely flexible Reading Pretzel SPECTRUM OVEN® offers radiation, convection and conduction heat transfer options in a single modular design, and is ideally suited for:

  • Extruded pretzels

  • Pet treats

The SPECTRUM OVEN® is an easy-to-use system that gives the operator complete control of oven temperature, humidity, and product bake time, and allows for the production of different products with a simple profile adjustment.

The optional SPECTRUM Multi-Pass Dryer provides faster oven speeds, greater production throughput, and more process control. The Dryer efficiently reduces product core moistures improving overall quality and storage characteristics.

The SPECTRUM OVEN® is shipped in factory pre-built modules for fast installation and minimal plant disruption. It is available in full stainless steel construction where salt, corrosion or high humidity levels are a concern.
