Origins of Pretzel Production
Pretzels may be the world’s oldest snack food. Their history is thought to date back to the 6th or 7th century AD when European monks hand-shaped and baked long pieces of leftover dough to resemble the crossed arms of a person in prayer. The snacks were reportedly given to children as a reward for learning their prayers. It is believed that the name “pretzels” is derived from the Latin word “pretiola,” which means “little reward.”
In the U.S., pretzels were popularized right here in Pennsylvania, when the first commercial pretzel bakery was established about 1850. Edwin I. Groff, one of the founders of Reading Pretzel Machinery Company (the forerunner of Reading Bakery Systems) is credited with patenting the first commercially-successful automatic pretzel twisting machine in 1951. It revolutionized the pretzel-making process and enabled bakers to make far more pretzels than it was possible to do by hand.
Today, pretzels are made on highly automated production lines that are capable of producing several thousand pounds of pretzels per hour. Decades of innovation have led Reading Bakery Systems to introduce other pretzel machinery, including low pressure extruders, ultrasonic cutters, hot cookers, 2-pass baking systems, variable heat-flux ovens and multi-pass dryers.
SPECTRUM OVEN®
The Reading Pretzel SPECTRUM OVEN® offers radiation, convection and conduction heat transfer options in a modular design, making it ideally suited to extruded pretzels and snacks.
The SPECTRUM OVEN® features an easy-to-use system that provides the operator with complete control of oven temperature, humidity, and product bake time.
A kiln or dryer module may be combined with an oven module to create a two-pass baking chamber that maximizes your available space. An optional Multi-Pass Dryer provides faster oven speeds, greater production throughput, and more process control.
The SPECTRUM OVEN® is an extremely flexible platform for customers who wish to produce high volumes of pretzels and snacks. The system offers a high standard capability of 400-1000 kg/hr.
Customers who are interested in lower production volumes may prefer the single-pass Vector Series Pretzel Oven with convection baking for volumes of 125-500 kg/hr of finished product. The Vector Series Pretzel Production Line is a complete system that allows you to produce pretzel sticks, pretzel minis, and a variety of other pretzel and snack shapes on the same production line.
It’s important to buy a commercial pretzel oven from a source you can trust, and Reading Bakery Systems’ has unrivaled expertise in the industry. We offer both direct gas fired (DGF) and convection ovens and manufacture a wide range of equipment to meet your unique snack production needs.
