Validating your Product Using the Scorpion® 2 Profiling System
Is your thermal process of baking, curing, proofing, or freezing behaving erratically? Are you sure your heating process is achieving Kill Step, to protect consumers and ensure FSMA compliance? The SCORPION® Data Logging System has been a staple in the thermal process industry for over 20 years and can be the key to understanding both of these important issues.
This webinar will discuss how to use the SCORPION® 2 to analyze Bake Cycle S-curves for bread and bun processes using the Pan+Dough probe and how to perform Kill Step Validations on your products using the SV8 Food Safety Module. We will review each of the Smart Sensors applicable to these and their various attachments used to help accomplish this, and review processes and procedures on measuring and validating your Kill Step to ensure at least a 5-Log reduction.
We will also show you how to ensure your product is consistent by using Statistical Process Control (SPC) from inside the SV8 Software. By setting up baseline process profiles and comparing your newest runs to them using the SPC Module, we will show you how to confirm stability and repeatability in your thermal processes.
Together, these techniques will equip you to be forewarned of maintenance or quality issues in your process and help you to pinpoint where in the process they originate while minimizing downtime and rejected product.
