Innovations in Healthy Pretzel and Baked Snack Production
Low Pressure Extrusion (LPE) technology presents biscuit and snack producers with unique opportunities to develop interesting products that have been well-received in snack markets around the world. RBS has been leading development with LPE technology since the 1940’s. Understanding the flexibility of the product capabilities begins with understanding LPE technology. Baked snack ideas will include co-extrusion, flat pretzels, sushka, pretzels, expanded nuggets, broken pretzels, bread snacks, biscuit products, potato-based snacks, and braided rods. Process challenges that are unique to LPE such as crystallization will also be discussed.
